Anybody in the restuarant business?

I am not currently in the restaurant business but I have managed the dining room and catering department in a hotel. I have also spent ten years in the food service provider field. Maybe I can help?

The best advice I ever heard was "Go work in a restaurant in your town that is similar to what you want to open, for 2 years, and if you still want to do it, do it. But don't expect to get paid the $7 an hour you got when your were just testing it out".
