Alright......
I got a buddy that went up to Canada back in June and shot a black bear.......
He ain't got no idea what the best way to prepare "bear meat" if there is any......
Does anybody have any ideas?????
And, if you've ate it.......What was it like????? ::huh:

Tim, Tell your friend to soak the bearmeat overnight in buttermilk , Then cook it as you would with any other wild game except bear meat is sooo lean it will dry out quickly so either use an injectable marinade , baste often , or use bacon as a wrap

Okay, I think I can handle this one. Coon Dawg can also throw in a few tips. The most important thing is to remove all the fat. Bear fat has a very powerful taste and it aint a good one. The best cuts of course are the loins but some of the steaks are good too (if not a little tough). I always cut into smaller steaks (or dice the loins) and mix in bourbon, steak sauce, barbecue, worstchestershire, and a whole cut up onion. Marinate for one to two days and grill. Leave it pink in the middle.
the rest makes good bologna, sausage, or jerky. Bear meat depends largely on time of year, age, and diet of the bear. I killed a young 2.5 year old boar one year. Loins just about melted in my mouth.

I have a Big Game Cook Book with some really good recipes and good info on bear meat. One thing it says is under no circumstances should it be eaten rare because bear like pork can carry trichinosis. So be careful. I have eaten bear before and it is a very sweat meat at least I thought so, it was very good. I can copy these recipes and send them to you if you like. Just let me know.Here are some names of the recipes: Bigos ( a polish hunters stew ), Barbecued Bear, crockpot Bear, Appalachian Bear Roast, Bear Loaf, Dutch Oven Bear Roast, Barbecued Bear Loin, Bear Sobieski with Croissants and Bear Fricasse V-8.
Another WARNING Do not eat bear livers or feed to your pets. Bears secrete vitamin A in their livers in amounts that can be toxic to humans and dogs or cats.

I never cook "bear", grease burns in places you don't want, so I at least wear an apron...the guys in camp don't let me cook though...
