Leftover srore bought ham ideas??

Mama had a shin-dig at church today.

Pop cooked a "store bought ham" (cured, not fresh)
yesterday and I went over last night with my slicer to help them get it sliced and looking good.

So...

I have a nice bone and some of the what I call
"bark", the darker stuff from where I trimmed it up
before slicing.


I love peas, beans and greens. That's what I would normally do, along with some cornbread and buttermilk.

Just looking for something different to try.

Any suggestions?

Boil some cabbage and drop the bone in it and add a cap full of liquid crab boil to it.. Try boiling potatoes and onions and drop the bone in it also with a cap full of crab boil. Cooks some white beans add the bone then when the beans are soft, take the bone and water out. Brown some onions and add the beans cook till tender service with rice.

Sounds like a plan.

Done boiled down and pulled off the meat,
trimmed the fat.

Broth is in the fridge. Will skim off fat from top.
Should be good and hard by now.

Ok.. Followed it almost to a tee..

Had to use Old Bay cause I didn't have any liquid crab boil
on hand.

Turned out great. Looked good as well.

Sorry, no fartsmone for pics but it was purtty..

Got any Boudin or Andouille recipies?

Yer' stuffer looks a lot like mine and
I have PLENTY of breakfast sausage in the freezer.

Need to use up some frozen trimmins too..
Bout 75/25% ratio.

Got a box of bacon ends that needs to be ground.

My mom used to make a casserole with the scraps from the bone. Macaroni, cream of mushroom, cheddar cheese and bread crumb topping.

Take those trimmings and bone, put em in a big pot of water with a couple of bay leaves, bring to a boil then cut back and simmer for an hour or two. Then make up a batch of dumplins` and cook em in that ham stock.

Ham dumplins` are mighty good.
