I'm going opposite with the right but the GA state shape may not show up on metal as well? I'll let the experts decide that one.

As a Graphics professional, I think there may be too much going on in both marks. I don't think you need to put the outline of GA or the outline of one knife design on your knives. The line weights that you need to reproduce on a knife are limited by the size of your mark. Smaller knives need smaller marks and some things just don't reproduce at that size. Besides, you will make many knife designs in your career and you may find that your opinion of that profile will change over time. Keep it simple with your name and maybe where you are from. That's my $.02, keep the change.
