Dry aging question for HuntinJake 23, et al

I’d been pondering on the dry aging thing for a while, so when I saw an ad last night for CAB sirloin on sale for 4.99 per pound we ordered the bags!
When we got to the store today-surprise....
It was top sirloin, not the strip sirloin I expected.
facepalm:

Oh well, we got a 12 pounder anyway.

Anybody have any experience with these?

I have only done ribeye, but I’ve seen on YouTube videos people doing NY Strip. With that said I’m sure any hunk of beef will do. I’ve pondered dry aging a whole brisket and then smoking it to see how that would be.
