How to "put up" or can hot peppers????

Take all them peppers and put them in your dehydrator till dry and grind them up with a coffee grinder. Use empty shaker bottles to store. I shake it on most everything I eat.

I got about 20 jalapenos peppers from my plant.

So if I'm reading correctly above to can them I put some in a jar and pour boiling vinegar on them to the top?

Sterilize the jars, and put a teaspoon of Kosher/canning salt in jar, and your good.

If you slit them, they will preserve faster and more to the jar.

You can do just vinegar, but they won't keep as long.

You don't even have to boil the vinegar, boiling it just makes the peppers "take up" the vinegar faster.
 
said that you should make a few cuts in each pepper to let the air out and the fluid in? I guess under the idea that there's air in there like in a bell pepper? Just crazy internet stuff then???

I don't think your are "letting the air out" as much as you are increasing the surface area exposed to the pickling solution.

One of those "doing the right thing for the wrong reason" things.
