I don't think I've had a slice of real coconut pie since I was a kid. Tonight I made a coconut custard pie like Granny used to make. The good thing is neither my wife nor daughter like coconut,,,,,,, more for me!!!

Fabulous! I love coconut myself, for some unknown reason, most people don't. I wish I knew the Mounds candy bar coconut mixture!

My apologies for dragging on this one.

1 unbaked deep dish pie shell
3 eggs
1 cup milk
1/2 cup heavy cream
1 tablespoon unsalted butter (melted)
1/2 teaspoon grated orange peel ( could skip if you don't have any, but it does add a nice citrus flavor )
1/2 cup sugar
3/4 cup grated coconut
extra 3 tablespoon grated coconut

In a large bowl beat the eggs ( mixer okay )
add milk and heavy cream and blend well
add butter, orange peel, sugar and 3/4 cup coconut,,, blend well
pour into pie shell
sprinkle with remaining 3 tablespoons of coconut

Bake at 400 degrees until custard is well set. ( begin checking at 35 minutes ) Kinda jiggle the pan to check it. It will be clearly liquidy at first, then once set it's more like firm jello. Let it cool before digging in.
