Got a lot of fresh meat from a South GA wild pig. Tonight I grilled a loin that was rubbed in some pecan oil, sage, and a dry rub I concocted that was heavy in coffee and cumin.
Served that with some brown rice cooked down with pecans, sage, and dried cranberries.
I like to get a little out there with sauces sometimes..... I guess I would call this a Redeye Gravy Cream Sauce perhaps? Diced some country ham and browned off in some butter and oil. Added a cup of freshly brewed strong black coffee. Put a little w'shire sauce, some onion powder. garlic powder, salt and pepper in it and let it reduce a little. Added some heavy cream and let all that reduce until thickened to the right consistency. That sauce stole the show!
