Quail and Pheasant Recipes???

What is your favorite way to cook them? I've never made them before and need some help.

It really hard to beat deep fried Quail.

Soak them in buttermilk for a while then coat with seasoned flour. Deep fry about 10 minutes.

The last quail I had,I cooked in crockpot using this recipe,it was very good.

12 quail

3 tablespoons flour

Salt and pepper to taste

1 large onion, sliced

2 slices lean smoked bacon, diced

1 clove garlic, crushed

1 (4-ounce) can sliced mushrooms, drained

1 bay leaf

1/2 teaspoon thyme

1/2 cup beef broth

1/2 cup dry white wine

Chopped parsley

Dust quail with a mixture of flour, salt and pepper. Place onion slices in slow cooker and top with quail. Cover quail with diced bacon. Add all remaining ingredients except parsley. Cover and cook on LOW setting for 7 to 9 hours.
