Uses for green tomatoes?

Hi gang,

A bunch of green tomatoes fell off my plants when the tropical storm blew through. Besides frying, what else can you do with a green tomato?

Thanks for any ideas.

Cut them in pieces and make pickles, just like the directions for kosher dills. Wifey won't eat a mater, but she'll tear those things up.:cheers:

We always breaded them before frying.. One day some had fallen off and I figured I would try just sautéing them in some olive oil without breading them. Came out really good with a lot less work.

Will try pickeling some, sounds really good

My opinion is let them sit in the window sill until they turn red.

That is the only way a tomato is fitting to eat.

I didn't get his recipe but my dad used to make green tomato relish and everyone loved it.

Pickled Green Tomatoes (Maters)

Sterilize quart jars (6), lids and rings
20 Clean, baseball size green tomatoes, cut into bite size pieces (6 qts)
Make brine:
11/2 qt. water
11/2 qt. distilled white vinegar
¾ cup pickling salt
Bring ingredients to a low boil.
Place 2 tsp. (+) minced garlic and 1 tsp. dill into each jar then add green tomatoes (pack’m).
Ladle brine into jars, remove air bubbles, fill to ½” of top (head space).
Apply lid and ring, tighten.
Place filled jars into processing pot and process for 5 min. (boil time).
Remove from pot onto towel to cool; lid should pop when jar is cool.
For lids that do not pop or seal, replace lid and process again.
I usually complete 16 quarts in 4 hours.

Options: Add hot pepper pieces and/or onion quarters for a little different flavor.

Remember that the juice from the green mater jar is great on greens.

Fer supper fixens try green mater chow-chow. Simply use one quart of pickled green maters, and add finely chopped onion, cucumber, mild or hot peppers, then salt and pepper to taste. Place in fridge for about 4 hours. Great on peas or beans.

For salsa, puree green maters, onion and peppers (hot or mild) and add one small can of green chilies. Try this at your next hoedown.
