1eyed chili venado...

...just joking, seriously.
I just stepped back in from deer camp.
This chili recipe got me through the weekend. It's a good one.

Fry up a pound of thick-sliced bacon very crispy in a large frying pan.
DISCARD the bacon. Brown 1.5 -2 lbs of ground deer meat in the bacon grease. Drain the meat in a colander so the grease drips into another frying pan. Return the bacon grease to the original frying pan and brown another 1.5 - 2lbs of ground deer meat. Drain off the grease.
Add the ground venison to a large pot containing the main ingredients:
Large can (28oz?) can of tomato sauce
Large can of diced tomatoes
Regular can (12oz?) Tomato paste
Regular can of Campbell's beef consommé
Regular can of drained Mexi-corn
Regular can of drained pinto beans
One jar of sweet roasted red peppers, chopped and diced.
One tub of hot salsa (I like the grocery store style)
Two packs of Tex-Mex chili seasoning
Two packs of hot chili seasoning.
Add onions to taste (I pass)
I keep the beans and the corn count low to keep the carb count low.
You can find a jar of roasted red sweet peppers beside the pickle jars at the grocery store. They make the chili sweet at the first taste but the hot carries through in the end.

Good instant meals at deer camp!

I wish I had never seen the words "DISCARD the bacon" with my eyeballs. I can never forget the horror....
