The bag in the first photo is deer.

The next two show bags made from a product referred to as "deer tanned cow hide." It's tanned and finished in such a way to make it appear similar to deer hide.

The larger of the two pouches in the last photos is made of cowhide "splits." The smaller is deer tanned cow hide.
