I’m back on day shift now and am able to get cooking again. Had a craving for a BLT so I put my own twist on it. Started with a loaf of brioche bread, sliced it and toasted it in the cast iron pan in some butter. Grabbed some thick cut bacon from the local butcher and fried it medium in my big cast iron skillet. Assembled with mayonnaise, Colby jack cheese, sliced avocado, tomatoes, arugula, and some balsamic glaze.
