Buckboard Bacon

A while back I saw a post on here of someone making buckboard bacon from pork butts, so I decided to give it a try. I got the cure kit off of amazon and used two pork butts that’s I deboned. Covered them in the cure then put them in a food saver bag and sealed, let cure for 10 days or so before I smoked it and then sliced it. It’s pretty darn good, a touch on the salty so I’ll have to was back on the cure next time. Tastes like bacon and country ham.

Man that's some pretty bacon!
Can you rinse it & get some of the salt out before cooking?
I know you can do that with salt pork (fat back).

That's what I was thinking. Rinsing is the norm with country ham.

I might be the exception but like mine on the salty side. Like it when I eat some and drink lots of water the rest of the morning.:biggrin3:

I don't know how I missed this one. That is some mighty purty bacon, I wouldn't mind giving that a try.
