Burgers and Beans

Crawfish Burgers….. sweated down onion, peppers and garlic and then mixed with crawfish tails, Mayo, creole mustard, w’shire, hot sauce, an egg, fresh grated Parmesan, and bread crumbs. Let that sit in the frig and set enough to make patties and then pan fried. Topped with arugula, maters, and homemade tarter sauce. The side is northern beans mixed with olive oil, vinegar, shallot, green onion, cilantro, mint, parsley and creole seasoning and allowed to sit in the fridge for a while.

Never heard of crawfish burgers, but I bet they are good. At least you make them look good :cheers:

I've done burgers with shrimp a few times and it turned out good.

Crawdads I LOVE and I run my own traps.
When I have enough left over from a boil, I make a gumbo or Étouffée.
