Experimental burn

I’ve tried smoking raw eggs in the shell and wasn’t super impressed so tonight I soft boiled a couple and peeled them them before smoking. These were slightly better but I still have some fine tuning to do.
Tried the armadillo eggs. They were good but not quite as good as I hoped (probably make a decent cook-out side or snack)
Stuffed poblano pepper was the clear winner tonight. Stuffed with sausage cream cheese, Mexican blend cheese, onions and garlic. Turned out pretty tasty. If I cut back on the cream cheese next time it’ll be perfect

I like roasting those poblano peppers and putting on hambrgers or sausages. I don't know why I haven't thought about stuffing them before. I'm going to do that next time though.
Food looks great.
