Heart recipes?

You’ll never throw another one away.

I dunno about that, but I'll definitely think twice on it and keep them more often than not, assuming I don't liquefy them with a bullet. This guy caught it in the high shoulder/spine but I usually prefer heart/ lung shots to limit shoulder damage.

I was gonna cook up the tenderloins in the cast iron after but I was slap full from that fried goodness. They'll be on the menu in a day or two.

Fried in bacon grease is great too.

Here's something different to do with a deer heart - Pickled Venison Heart

1 venison heart
Salt
2 bay leaves
1 onion, sliced
3 parts water/1 part vinegar mixture
Pepper

Place heart in a large saucepan. Add water to cover, salt, and bay leaves. Bring to a boil, simmer (covered) until tender. May take up to 4 or more hours. Drain when tender, cool and slice thin. Place in a bowl with the onion and water/vinegar mixture (enough to cover the slices.) Add salt and pepper to taste. Soak in refrigerator overnight. Dry and use in sandwiches or as an appetizer. Place a dab of mustard on a cracker, top with a piece of heart and a sprig of parsley.
Great with beer!
