I have a cookoff in 10 days and needed to test a new sauce and injection, but just haven't had time to cook a butt. So,,, I picked up some inch thick porkchops and injected them this morning. Cooked them indirect heat on the Weber. Did my wonderful wife a big old slab-o-salmon. The results were encouraging. Served with mashed tater, lima beans and fried apples.
