Took anvilheads advice and Thought I’d try another one of these.

1084 steel

Little things like that make a lot of difference. Also the slightly upswept handle is a user-friendly ergo factor. The slightly longer handle is another plus. Most user's in the kitchen wind up preferring a longer handle. Nicely done.
