Question about chufa

About this time every spring I disk up a strip or 2 in my chufa plots which really seems to help with turkey visits , well this morning I disked up some and after I was done I was putting up a trail cam and noticed a clump of chufa I had cut and they have liquid coming out , so I started digging around and found a few hard ones but most were kinda soft , I could smash them and they would pop like a grape , my question is are they rotten from all of this rain or some type of worm or bug damage or is it just a stage they go through , I’ve planted them a few years and never noticed this thanks

Its a stage, its how horchata is made
Thanks a lot , I sure hope u are rt , wonder how long they stay soft , I done some internet searching on horchata and it says they soak the chufa in water a while before smashing to make the horchata , I hope they are soft because the ground is so wet and they return hard , I guess I will see

Off topic but I actually like eating Chufa. Taste like coconut to me.
