Smoking a (SO CALLED)Brisket on Akorn Today ???

My cousin brought me a brisket and wanted me to smoke it for church dinner on the grounds tomorrow. Hopefully I can pull it off. Got it rubbed down with my Classic Brisket Rub and on the smoke. It’s looking good.

He works for a company that provides meat to delis and restaurants and they were having to do maintenance or something and gave him this brisket. It doesn’t really look like any I’ve ever smoked. Guess I’ll know more when I slice it. It’s really squared up and thicker than the ones I’ve cooked in the past.

That brisket got done way sooner than I was expecting.
I learned a while back that the weather (atmospheric pressure and humidity) have a LOT to do with how fast any piece of meat on a smoker cooks.

Well I dunno what this was. Like I said, my cousin got this from where he works. He told me it was a brisket. The packaging had nothing but lot numbers on it. It had a fat cap on it. I’ve cooked a hundred briskets and ain’t never had one turn out bad. This “thing” I smoked today is the absolute driest piece of meat I ever put in my mouth. It fell apart like a roast in the crock pot. I’m thinking about pouring a bunch of beef broth in the pan with it but I honestly don’t wanna waste the broth! Imma take it to him and tell him don’t tell anyone I cooked it! Makes you wonder, when you go to that sub shop and order a brisket sandwich what cut it actually is cause this AIN’T brisket!!!!

I'd you're short on time they work dandy.

Yours looks awesome. Sorry it was dry. I cook a flat about 1/2 as long as a whole and TX crutch it after about 2 hrs using a water bath smoker.
