Good cold night for some warm spicy soup. Have nursed my fall garden through a marginal freezing night and a couple of frosts, but with two nights coming in the mid to upper 20's, time to quit nursing and start getting it and using it. The soup is a kale and Andouille soup. Sweated down some Andouille and onions, then added some garlic, thyme, a bunch of parsley, diced potatoes, bay leaves, and let all that marry for a couple of minutes. Then added some chicken stock and the kale and let that simmer until the taters were tender. Topped it with some parmesan and chopped mint. The salad was a mix of greens, some banana peppers that somehow held on until now, parmesan, and some sautéed ****ake mushrooms. Topped that off with some Vidalia onion dressing not in the pic.
