Got a small butt on, now finishing in the yard.
Is that a homebrew rub? What's in it? It looks VERY red like it has a lot of paprika and chili.

It's Everglades Rub. I made my own for years and years but use this for almost all of my chicken and pork now. It's the bomb dizzle for rizzle.

I took the leg quarters from the dutch oven chickens from Saturday night, pulled them off the bone, and hit them with some green chiles, Tex-mex seasonings, and such, added some homemade salsa, and stuffed them in some doubled tortillas heated with cheese between them for some chicken tacos. Made up some Mexican rice, and it was downright tolerable.
