turkey habitat

I had an area cleared earlier this year. About 2-3 acres. So now I have very open woods. I planted some clover and fruit trees for the deer. Now I'm thinking for the turkeys. I'm wanting to create some good nesting areas. Should I just let things grow a bit or should I plant clumping stuff? I have been doing food plots for deer (ICP clover rye etc) but want to do something for the turkeys. No Chufa (nut sedge) I dont want it.
Ideas?

I have a couple spots that are 4-5 acres that half is planted in food plots and half of it is scattered pines with real thick broom sage , not sure if it’s good habitat but I’m pretty sure hens successfully nest in it
