Your traditional New Years Day meal

Buncha fine looking plates in here tonight! Wish I had some of that cracklin cone bread Nic! Still on the ham I smoked for Christmas here. Canned collard greens (I know?), black eyed peas and Mrs. GaDawgs fixed some sweet corn bread. Was at camp last night and forgot to soak the beans so I soaked them for a couple hours today and then put them in our Insta-Pot pressure cooker thingy along with some chicken broth and ham. They were the best I ever fixed.

I'll be doing can collards when I get home as well, put the beans in the crockpot last night and turned them off before I came to work. Had LIl Wy stick the ham in the oven just a little bit ago

Outta support for Batjack I decided not to cook rice with mine this year. I chose to put it over the jalapeno conebread I made so there would only be the one starch that I didn't need anyway.

I might need to stay outta here for a bit myself. I became tobacco free in Oct sept I have been compensating with food...packin on a few myself.

I can't tell you the last time I cooked collards this good...don't get me wrong they are usually good...just today they are exceptional. Used bacon ends as the meat this time I got from Salt Lick Sausage Co. in both the peas I soaked overnight and the collards I iced and trimmed in the sink this morning.

We did gumbo for New Year's day. Sausage, shrimp and smoked Turkey. My roux needs some work...the end product was a little thinner than I wanted, but sure tasted good.20190101_110221-1328x747.jpg20190101_121924-1328x747.jpg

Black eyes with the ham bone from the other day. Collards, turnip greens and kale with smoked neck bones from a rooter that I smoked last week. A piece of corn bread to finish it off.

It was tolerable!

Dried blackeyes with smoked hog jowl and onion, collards simmered with smoked hog jowl, pork shoulder cooked over oak coals, cracklin` cornbread (still in the oven).

This is what we always have on New Years Day, but it is also standard fare for us all through the winter.

Mrs. elfiii claimed cook's night off yesterday so we are having ours tonight and much the same as yours. I could eat collards almost every meal during the winter, especially if you throw in a pone of cornbread.
