Been a while since I had some time to myself without obligations so I focused on food as is typical. Been a good, long weekend. First, I got ahold of some beef belly with the whitest fat I've ever seen, so I ground it in to a bunch of doe meat from last season. Got about seven or eight pounds worth out of the batch and made a few test burgers. Perfection.
A little plate of jalapeno venison sausage I made last year with whole grain mustard, homemade pickled red onion, and some borderline painful pepper jack cheese.
Broke out my grandma's old spongecake recipe and made up some orange curd to top it and drizzled a good amount of muscadine syrup on top.
Today was all about the smoker. Spare ribs, Korean Beef Ribs, and beef marrow bones smoked for a while. Mixed the marrow in to some salted butter with parsley, garlic, and green onion for future use.
White bean, bratwurst, sauerkraut soup was Friday's dinner and sun dried tomato chicken orzo pasta with charred broccoli was Thursday. Probably make a bologna sandwich tomorrow because I'm tired of tending the fire for a day or so.
