Pretty easy. 2 thawed pigs. Butter, garlic, lemon juice, oregano, and vinegar. Mop it flop it every 30 minutes and keep mopping it. Cooked about 8 hours low heat. Small flames. This is cooking vs smoking to an IT of 165. Let cool and chop and serve.

Awesome!! Our college major group and alumni had an annual pig roast every October. Started long before I got there and continued for a couple of decades after I graduated. For a long time it was a ton of fun and some great food. The new crop took over and it just faded away.
