Who grows asparagus in their garden. We have a patch in our's and we have had alot of asparagus. We just love it.
I have a few really good recipe's for asparagus if anyone is interested.

Asparagus Bread

I know it dosen't sound good but it is. Something different to do with asparagus.

Asparagus Bread

3 eggs
1 cup oil
1-2/3 cup sugar
1 cup brown sugar
2 teaspoons vanilla
2 cups of asparagus, cleaned and grated.
In a separate bowl mix:
3 cups flour
1/4 teaspoon baking powder
1 teaspoon salt
1 teaspoon soda
3 teaspoons cinnamon
1/2 cup chopped nuts ( optional )
Beat eggs until light and foamy. Add oil, sugar,
brown sugar, vanilla and asparagus; mix lightly.
Add flour mixture and blend. Add nuts.
Bake in a greased loaf pan at 235 degrees F
for 1 hour or until done.

Yield: 2 (5x9-in) loaves

This is an Amish recipe. Enjoy.

Asparagus Onion Casserole

1 lb fresh asparagus, cut into 1 or 2 in. pieces
1 med. onion, sliced
5 tablespoons butter, divided
2 tablespoons all-purpose flour
1 cup milk
1 package (3 ounces) cream cheese, cubed
1 teaspoon salt
1/8 teaspoon pepper
1/2 cup shredded cheddar cheese
1 cup soft bread crumbs

In a skillet , saute the asparagus and onion in 1 tablespoon butter until crisp-tender, about 8 min.. Transfer to an ungreased 1-1/2-qt. baking dish. In a saucepan, melt 2 tablespoons butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 min. or until thickened. Reduce heat. Add cream cheese, salt and pepper; stir untilcheese is melted. Pour over vegetables. Sprinkle with cheddar cheese. Melt remaining butter; toss with bread crumbs. Sprinkle over casserole. Bake, uncovered, at 350 for 35-40 min
Yield 4-6 servings

My brother's wife (that would be my sister-in-law) served asparagus one night at supper. Their youngest (9 years old) took one look and said, "What's this? Are you serving us bamboo?" Needless to say, he did not eat his portion. I am with him on that.

simple

BUT good! just heat it either in a pan or nuke it for a minute and add a big spoonful of cheese whiz on top and let it melt in. I love it.

Pendy: I too love Asparagus. I have a bed that is 3 feet by 20 feet and has been producing about 10 years. I have recently stopped cutting it so as to allow it to recoup for next year. Everybody, even city dwellers ought to have an Asparagus bed. You would be glad that you did.

Too bad that some do not care for it. I know some that do not even like ice cream.

Thanks, Pendy for the recipes. Will pass them along to my wife who is always looking for new ways to fix Asparagus. I like it raw, dipped in a cheese sauce. Also like Asparagus soup. Makes a quick and tasty meal when you do not have time to plan and prepare a full meal.

My husband just picked our last bunch and now he will let it go to seed for next year. Our's really produced this year. I even got to freeze some this year. We just have a small patch but we just love it.

Here's one

we absolutely love around my house.

Penne with Ham and Asparagus
Serves 4

8 oz. penne pasta
12 oz fresh asparagus
4 oz cooked ham
2 tbsps butter or margarine
1 cup heavy cream
Parmesan cheese (optional)

1, Trim asparagus spears about 1 inch from the bottom.
2. Steam the asparagus spears for about 2 minutes. Drain and allow to cool.
3. Cut the asparagus into 1 inch lengths, leaving the tips whole.
4. Cut the ham into strips about ½ inch thick.
5. Melt the butter in a sauté pan and add the asparagus and ham. Cook briefly to evaporate the liquid and then add the cream. Bring to a boil and cook for about 5 minutes to thicken the cream.
6. Meanwhile, cook the pasta in boiling salted water with 1 tbsp olive oil for about 10-12 minutes or until done your liking.
7. Drain pasta and rinse with hot water. Toss in colander to drain. Mix pasta with the sauce.
Serve with grated Parmesan cheese, if desired.

Preparation takes about 20 minutes. Cooking times: 10-12 minutes for pasta and 8 minutes for the sauce.
