Honey Locust Pollination...

Do I need to plant 2 honey locust for pollination and fruit set?

Worse then that, honey locust are "polygamo-dioecious". In other words you need a male and a female for full seed development.

Do you mind sharing your source for honey locust? I might like to plant a few myself this year.

Wildtree has them in 5 gallon pots but they are expensive at $85 per tree.
 
After a little additional reading:
As long as you have a female tree it will produce the pods - which is the part wildlife eat. I havent found anything that indicates wildlife pursue the seeds; just that they eat the flesh of the pods.
I would ask the nursery if they ship trees of known sex or not. At $85 each I would pass either way.

They are easy to grow if you sand through the seed coat.
