Lion's Mane

Picked up a Lion's Mane at the Franklin TN Farmer's Market a while back. Used it in several ways. An omelet with spinach, onion, peppers etc. A cream of mushroom soup with gruyere cheese that was outstanding! And finally seared off in some butter and served with sweet tater mash, a seared boneless chicken thigh and chow chow.

They are good, for sure, and you sure did that one justice. I found a huge one a couple weeks ago, but it had already gone sour.
