I killed a doe the last weekend at the lease. When I got home Sunday afternoon I decided I needed more meat to make as much sausage as I wanted to make so I asked my brother to shoot a doe Sunday evening if he could. He was able to take a nice sized doe. So I aged the meat for a week then last Sunday I cut and trimmed it all. I ended up with 4 hams and 3 shoulders and 38 lbs of trimmed meat.
I pulled two pork bellies out of the freezer and thawed them out. Thursday evening I had planned to get it all done but was only able to get the breakfast sausage made and some ground. My other brother who came to help me brought some meat off a doe he killed the last weekend to grind. He had kept some beef fat off a brisket he had cooked while back. Anyway, it got to late to do it all Thursday night. Yesterday my other brother came by and helped me so the brats. Also my daughter helped me stuff the casings. Man that was a lot of work! We ended up with 25 lbs of breakfast sausage, 25 lbs of brats and 18 lbs of ground. It all turned out very good!
