More Cajun Seafood

New Orleans Style Oyster Patties…. Some onion, garlic, celery, sage, thyme, and bay leaves sweated down in bacon drippings. Then put in some flour to make a roux. Added some oyster liquor, a touch of w’shire, crumbled bacon and heavy cream and let that simmer down. Then added the oysters. Served that over and in some puff pastry shells. On the side was one of my favorite things, a spinach, onion, goat cheese salad with a homemade warm andouille balsamic vinaigrette…..

I sure would love to tag along on one of your cooking sessions. I love Cajun food but haven’t tried to cook it at the house.

Can’t stand oysters, but it’d be hard for me to NOT take a bite outta that!
