I took a Hormel lemon garlic seasoned pork loin place in a 10X7 X1" high pan -put 3- 1/2" slices of viodalia onion under the pork in the pan--placed the pan over the right side of a gas grill- second rack up( I know charcoal is better but this is what I use) on the left sideof the grill I pile on the hickory and mesquite chips and fire it up right side burner on low left side on medium to keep the chips smoking -wet the chips as need to keep them from flaming up too high and let it smoke for about 1 hour I had to add chips 3 times---- man it was good added fresh butter beans and fresh purple hull peas man I was in hog heaven --should have had a fresh Mater with mayo and salt and pepper but was too full
