Great looking cut on that meat. But I’m just not a rosemary fan but I’m sure anybody that is will love that slab of beef!!
I bought it to do a prime rib.
Tried it on a steak a few times.
Pretty good if you don't put much. ?

So..
Wound up trying something new.
Instead of the stove top, I put the dry cast iron in a 400* oven during pre- heat, at 400*, 1 tbls of beef tallow. Back to oven.
Let that go to let everything get hot.

In with the steak. Timer set 5 min.
Flip. Broil on next to lowest rack, 5 min.
Flip. Broil 5 min.

Rest 5 min.

Served with ajus and cream horseradish.
Pretty good.20210916_202601.jpg20210916_202620.jpg

All kind of cravings flung this morning. From chili to blackened fish and oven cooked steak to a smoked butt.
