I buy the seasoning for my summer sausage from Hi-Mountains Seasoning. They recently sent me an email with a recipe for venison pastrami. I thought I would give it a try. Took a couple of venison roasts and followed the recipe. When I got finished and tried some I was amazed at how really good it was. Everyone I gave some to thought it was outstanding. I made the mistake of slicing the pastrami with a knife instead of slicing it thin on a slicer. Needless to say I will be making some again soon. That was actually the first time I had heard or thought of making venison pastrami. Has anyone else made venison pastrami and if so how did it turn out.
