Marinated a section of loin from a wild pig I got a couple of weeks ago in some jerk marinade. Coated it in a rub of salt, pepper, dark brown sugar, onion powder, garlic powder, cumin, allspice, clove and cinnamon. Grilled it over high heat.
Served it with some mashed sweet potatoes kicked up a notch with some w'shire sauce, butter, milk, brown sugar and nutmeg.
Made a sauce by sweating down some minced ginger and jalapeno and deglazed with some coconut rum. Added some coconut milk, lime juice, cilantro, paprika, w'shire sauce, and a touch of curry powder.
