The mustard just holds the rub in place...does nothing for the flavor. I have heard that some people use mayo, and I have used BBQ sauce for the same purpose.
Don't sweat the mustard...if you can apply the rub on raw meat, and it holds, go for it.
That's the glory of BBQ, isn't it? There is no ONE RIGHT WAY to do it.
