Are Canada geese good to eat?

Goose

Breast and thighs , you can use them for anything you would do with venison. The meat actually looks like venison. Just don't try and pluck one and eat with skin, they have some nasty fat. The meat is fine. Soaked a day or so in saltwater to remove some blood and some greasy, they turn pretty pink.
Add a little beef fat and grind and it will be the best burger you ever ate.

I age mine for a day or three in a fridge I have in the basement when it is hot, a cooler or outside if it is cool enough.

As was said before, anything you can do with venison or beef, you can do with a goose. Jerky, BBQ, grilled, smoked, just do it correctly.

Here are 5 I got yesterday, they will be headed to the grill this evening.
