Chicken thighs, what do you do?

I've never marinated thighs before. I do baste them with a mixture of Italian dressing, butter, lemon juice and sauted onions and green peppers. There are never any leftovers.

Try this recipe....easy as it gets but good
One Pan Chicken Thigh Dinner

  • 6 bone in chicken thighs
  • 1 lbs baby potatoes-golden
  • 12 oz baby carrots
  • Olive oil
  • Salt
  • Pepper
  • Brown sugar bourbon seasoning
  • Preheat oven to 450 degrees
  • Pat chicken dry with paper towel, coat with olive oil, season with brown sugar bourbon seasoning, salt and pepper
  • Rinse potatoes and carrots, drain, transfer to bowl. Add olive oil and brown sugar bourbon seasoning and toss.
  • In a cast iron pan or large sheet pan place chicken on pan and fill in left over space with potatoes and carrots
  • Cover loosely with foil and bake 45 mins, uncover and bake an additional 15 mins.

I cook chicken thighs a million ways, but if you're talking about standard "bbq" chicken, I brine them in a kosher salt/sugar/herb brine for at least several hours, hit them with bbq rub, and cook them on the smoker at about 300* until they're at about 165-170* internal, then hit them with some NC vinegar-based bbq sauce and leave them on there long enough for it to glaze.

I took two of them out of the marinade, breaded and fried them. It was OK. The masala was a better use for them.
Looks good! I got a pack in the fridge that are gonna wind up as Jamaican jerk chicken this weekend.
I make a chicken thigh Indian tikka marinated in yogurt, garlic, cardamom, and lemon with green herb chutney and grill naan bread that I haven't made in a long time. You got me thinking about it now.

Happened into a mess of chicken this afternoon. Pile of kingsford off to the side, damper down to 300-325 and let ‘er roll for over two hours. A little dousing with Charlie Mills and apple cider vinegar and it’s special.
