I call that "Mama-fried" backstrap. It's the way I grew up eating it from Mama's kitchen. Lay the salt and black pepper to it, pound it thin, brown it up on both sides in a cast-iron pan, add a little water to the pan, put a lid on, and let it simmer til the water is gone. It is forever more good. I could eat a dishpan full of it.
