I call that "Mama-fried" backstrap. It's the way I grew up eating it from Mama's kitchen. Lay the salt and black pepper to it, pound it thin, brown it up on both sides in a cast-iron pan, add a little water to the pan, put a lid on, and let it simmer til the water is gone. It is forever more good. I could eat a dishpan full of it.All looks good but that backstrap plate is extra special. Wouldn't complain about some of them grilled onions piled on also.
Now you got me craving some. Might have to bake up a loaf this afternoon if I get a chance.With a thick slice or hunk of homemade bread with a little butter drug across it.
