Fowl Meal

Last night's supper.

Little appetizer- fried wonton chips topped with ahi tuna, mango, red onion, jalapenos, maters, sesame seeds, and sriracha/lime crema:



Fired up the Akorn and cooked a spatchcocked chicken, foil taters with onions, red peppers, jalapenos, and bacon; grilled pineapple, and Texas garlic toast. Sliced the breasts for supper and pulled the rest for later Tex-mex meals. It turned out moist, tasty, and tender:

Man that looks great! Those nachos remind me of the yellow fin nachos at Salty Pelican in Fernandina Beach....one of my favorite meals.

A whole bird is hard to beat. Eat the breasts while still juicy and hot and the rest for the other meals. Nachos are amazing lookinig
