Little appetizer- fried wonton chips topped with ahi tuna, mango, red onion, jalapenos, maters, sesame seeds, and sriracha/lime crema:
Fired up the Akorn and cooked a spatchcocked chicken, foil taters with onions, red peppers, jalapenos, and bacon; grilled pineapple, and Texas garlic toast. Sliced the breasts for supper and pulled the rest for later Tex-mex meals. It turned out moist, tasty, and tender:
