One of my favorites from Eastern NC.

Crock pot for 5-6 hours with a little chicken broth and seasoning, meat falls off the bone.

Drop into a skillet with some bacon grease, sauté a little, then add 1/4 to 1/3 cup flour, 1 cup of milk, and 1 cup of water for each lb of meat. This is pretty thick gravy and the self-rising flour gets to where you can eat it with a fork.

This batch had about 6 squirrels and 1 bunny, maybe 2 lbs after picking bones and eating a couple doing so.

Season to taste while stirring frequently to light boil then turn down to simmer.

Great over rice or a biscuit.

that was a treat for me growing up!..granny would use the pressure cooker on the critters.....that is egg-zackly how i do my rabbits now....
