Just Some Wings & Beans

Getting ready for the battle of Tigers on the Plains, so what could be better than smoked wings and some crazy good baked beans?

Fired up the Assassin 17 (made in Macon by C&C Manufacturing) with Kingsford Professional & peach wood from Baxter's Orginal in Fitzgerald.

Marinaded the wings in half/half mix of Moore's Marinade & Italian dressing. Dusted the wings with Victory Lane All Purpose then added Parkay.

Cooked them at 275 for 1 hour in the butter bath, then another hour on the rack. Dunked in my homemade BBQ sauce spiced up with a few dashes of hot sauce. Let them go 15 more mins to set the sauce. This was the first time cooking chicken in a butter bath. By far, the best wings I have ever cooked. They were tender, juicy, flavorful with bite thru skin.

Also did a pan of smoked, crazy good baked beans

Bean recipe:
1 55 oz can Bush's Baked Beans
5-6 slices bacon, cooked crisp & cut into 1/2" pieces
1/2 medium Vidalia onion
1 small bell pepper
1/2 cup brown sugar
1/2 cup ketchup
1/4 cup Worceteshire sauce
1/4 tsp ground mustard
Optional: 1 cup pineapple chunks, 1-2 jalepeno pepper, diced

Fry bacon & set aside on paper towel. Saute onion & peppers in bacon grease. Drain & set aside.
Combine beans, brown sugar, ketchup, W sauce & ground mustard. Mix in onion & peppers, then carefully fold in bacon. (you can adjust sugar & ketchup to taste)
Pour mixture into baking pan & place in smoker at 275 for 2 hours or until beans thicken. You can also bake in oven at 350 for an hour or until thicken.
