Pablano stuffed with shrimp, onion, jalapeño and cheese with cumin and cilantro. Saffron rice. The sauce is a sort of mole deal. Rehydrated guajillo peppers, chipotle pepper and adobo, roasted sunflower seeds, toasted tortilla, raisins, roasted garlic, and cumin cooked down in stock and then blended. Topped with a little lime-cilantro dressing the wife made a day or two before.
