Tired of all the Prime Rib recipes, low and slow, high heat turn the oven off etc. Warm up to room temp, rest an hour, sear at the end
yada, yada!
Pull that sucker out of the fridge, salt and pepper, turn oven to 275, cook and an hour then start cranking oven gradually so you achieve your target temp at what time you want to eat. As the oven gets hotter the taters are getting done, pull the roast at ur target temp, throw the rolls in with the taters while the bread toasts.
Roast rests comes up to temp, everything is ready to eat. You rest a roast an hour here, u’ll be eating cold beef! Anniversary Dinner,, DONE!!
