Nuther overnite brisket cook. I did it for a neighbor and good friend. He's throwing graduation party. He's a backyard BBQ'r himself. But wanted me to do the brisket and he's doing leg quarters. It was a quick cook for a brisket at 225* cook temp. 9 hours. Every brisket is different. I prepared for a 12 hr Cook. But it's done and now wrapped in a cooler awaiting pick up. I used my beef wet rub and it rested in it all day prior to smoking.The foil on each end is to protect the extreme edges from scorching.
