Nuther overnite brisket cook. I did it for a neighbor and good friend. He's throwing graduation party. He's a backyard BBQ'r himself. But wanted me to do the brisket and he's doing leg quarters. It was a quick cook for a brisket at 225* cook temp. 9 hours. Every brisket is different. I prepared for a 12 hr Cook. But it's done and now wrapped in a cooler awaiting pick up. @Hoss Pay gave me an idea from his smoke. Put up a sign in the yard.

Smoke a Brisket for a Brisket.

Buddy of mine hauled me up to his place on the Rock River in Illinois to do some renivations on his "new" house and build him a dock. I took my smoker, a couple of boston butts, and a few bags of hickory with me, that Sat. morning I started the 1st one at day light... by noon everyone in the neighborhood was there with food stuffs to swap for a sammich! Till then their idea of B.B.Q. was shreded pork and a gallon of sauce in a crock pot for 12 hours.
