So, is that aluminum foil in the grill just over the coals? Your meal looks excellent.

Yes sir, a small folded double piece of foil on the lower grate above coals as a diffuser. I never use the water pan. A lot of times I hold off on the foil until I get the color and the bark I want, then add to foil to keep it going slow without burning and getting to dry. Also it keeps the fat drippings at a minimum as to not blaze up.
