I haven't ever made potato rolls, but my grandma's Thanksgiving and Christmas rolls are the talk of the town..
From the recipes I'm reading these need to rise twice, an hour each time.
I have a bit of a tricky schedule around dinner time as I have to leave to go pick my son up for practice, which takes about an hour.
They are supposed to get out at a certain time, but the coaches love to hold them back longer for various reasons.
How forgiving is dough if rise time extends to over an hour?

I heard in a video these freeze well, is that before or after baking?
