Smoked country ribs

Cannot find a picnic shoulder up here nowhere. So, lets cook some huge country ribs. Looking for bark, w/ little less fat ratio than boston butt. Oh but I cut up. B -butt into a few pieces a month ago, more outside meat and bark.
